Vegan Couscous Stir Fry Recipe

If you’re looking for a healthy, vegan dish to add into your weekly meal calendar, look no further than this colorful recipe chock full of vitamins and nutrients. Like pasta, couscous is made from durum wheat semolina but is considered a healthier alternative because it uses the whole grain.

Recipe serves 4.

Ingredients 

  • 1 cup of couscous
  • 4 cups of uncooked spinach (coarsely chopped)
  • 1 red pepper (diced)
  • ½ cup white onion (finely chopped)
  • ½ cup eggplant (diced)
  • 1 cup broccoli (coarsely chopped)
  • ¼ cup of teriyaki sauce
  • 1 tbs sesame seeds
  • 1 tsp chilli flakes
  • ¼ cup fresh basil
  • 1 tsp oregano
  • Salt and pepper to taste
  • One full dropper of Cani-Fresh CBD Oil 1500, or as desired

Instructions

Cook couscous as directed by package. Once cooked, set aside. In separate pan, stir fry all vegetables in coconut oil. Add in salt and pepper, chilli flakes, oregano, and Cani-Fresh CBD Oil 1500. Serve on plate and top with sesame seeds and basil.
